1 c. whole wheat flour
1 c. buttermilk
2 tbsp. shortning, melted or vegetable oil
1/2 tsp. salt
1 tbsp. honey or sugar
1 tsp. baking powder
1/2 tsp. baking soda

Directions:
Directions:
Beat egg with hand beater until fluffy; beat in remaining ingredients just until smooth. For thinner pancakes, stir in 1/4 c. milk. Grease heated griddle if necessary. To test griddle, sprinkle with a few drops water. If bubbles skitter around, heat is just right.
Pour about 3 tbsp. batter from tip of large spoon or from pitcher onto hot griddle. Cook pancakes until puffed and dry around edges. Turn and cook other sides until golden brown. (To keep pancakes hot, stact on hot plate with paper towels in between or place in oven in round cake pan at 170 degrees.
