2 c. chopped celery
3 green peppers, seeded, & chopped
1/2 tsp. cumin
6 qts. peeled quartered tomatoes
3 tbsp. sugar
2-1/4 tsp. garlic juice (or 3 cloves garlic, diced)
3-6 oz. cans tomatoe paste
3 tbsp. salt
1-1/2 tsp. oregano

Directions:
Directions:
Cook vegetables in 3 tbsp. oil until tender (celery, onion, & green pepper). Add the peeled and quartered tomatoes, tomatoe paste, and seasoning. Simmer all for 1-1/2 hours uncovered. Put in jars and seal. Place in large canner, cover with warm water and simmer for 50 minutes for quarts and 40 minutes for pints.
