1 pt. milk
3/4 c. corn meal
1 tsp. salt
1 T. sugar
2 T. melted butter
3 eggs (separated)

Directions:
Directions:
Scald milk and add corn meal. Cook until it thickens, remove from heat, add salt, sugar & butter. Add the egg yolks beating constantly, let this cool. Beat whites and fold into mixture. Place in casserole dish and bake in moderate oven (375) until it rises high and browns, about 30 to 35 minutes. Serve hot because it will fall.
