1 bag Southern style hash browns
1 can cream of chicken soup
1-16 oz. sour cream
1 stick margarine
1# Velveeta
1 sm. onion diced

topping: 7 oz. cornflakes crushed
1 stick margarine

Directions:
Directions:
*thaw frozen potatoes slightly so they are easier to separate
In pan, melt margarine, add onion, and allow to get tender. Add in soup and cheese(cube cheese to make it easier to melt), remove from heat and stir in sour cream. Mix cheese mixture with potatoes in large bowl. Pour into greased 9 x 13 pan. For topping: melt other stick of margarine and mix with crushed cornflakes, spread over top of potatoes and cheese.

Ever since my sister, Liz, made this recipe, it quickly became a holiday tradition...our family has grown so much now we make 2 pans of this at the holidays, and one pan is made minus the onions, for those who don't like onion in it...
