**Okay,I thought I had this written down somewhere & I don't ! These ingredients & directions will be from memory,so you can tweek it just like I have over the years. I'm sure she did too.**

* About 15 big Bella Roma tomatoes
* 3 large onions/diced
* 3 heads garlic/minced
* olive oil
* dried basil,Italian seasoning & oregano
* canned tomato sauce
* canned tomato paste

*Boil a large pot of water & plunge the tomatoes 'til the skin "pops"*Remove & dispose of the water & cool the tomatoes.*In a large stock pot heat some olive oil & add the onions & garlic,cook'til they're soft.*Add the sauce & paste.*Peel the skin off the tomatoes & coarse chop them,add to the sauce.*Cook on low for 2 to 3 hours at least.*Add in the herbs at the end of cooking.
**You can add as much sauce & paste as you like.Sauteed mushrooms & peppers can also be added. There really are no rules here.The trick is to have fun making it & to share it with your family & friends.**It does freeze up nicely,so make a bunch & stick some away for later.
