1 Cup Bisquick Baking Mix
1/2 Cup Shredded Mozzerella Cheese
2 Eggs, Beaten
2 Cups Shredded Zucchini
2-3 Tbls Chopped Onion
Salt to Taste

Directions:
Directions:
Combine Bisquick, cheese, salt, eggs, zucchini and onion in a mixing bowl. Blend well. Heat a small amount of olive oil in a large skillet. Fry for about 3-5 minutes per side, until golden brown. Serve warm with a dollop of sour cream if desired.
