1 pkg (8oz) elbow macaroni
3 T. butter
2 T. all-purpose flour
2 c. milk
1 tsp. salt
1/4 tsp. black pepper
2 1/4 c. (9oz.) shredded sharp Cheddar cheese, divided
2 T. Italian-flavored breadcrumbs

Directions:
Preheat the oven to 350 degrees. Coat an 8 inch square baking dish with nonstick cooking spray. Cook the macaroni according to the package directions until firm; drain and set aside. In a large saucepan, melt the butter over low heat. Stir in the flour, and cook for 1- 2 minutes. Add the milk, salt, and pepper, and cook over medium heat, until the mixture starts to bubble, stirring occasionally. Remove the mixture from the heat and add 2 cups cheese, sitrring until melted. Add macaroni; mix well then pour into the baking dish. Top with the remaining 1/4 cup cheese and sprinkle with the bread crumbs. Bake for 20 - 25 mintues, or until the mixture is bubbly and the top is golden.
