Corn Chowder Recipe

4oz. salt pork or country ham
1 T. butter
2 c. diced onion
1/2 c. green pepper
1/2 c. red pepper
1 bay leaf
3/4 c. fresh bread crumbs
2 c. water
2 c. chicken broth
3 c. diced potato (cooked a little)
2 c. half & half
2 c. fresh or frozen corn

Fry pork in butter. Stir in onion. Add bay leaf, cover and cook slowly 8 to 10 minutes. Drain fat, add bread crumbs, stir well. Add water and chicken broth, stir well and add potatoes. Bring to a boil, lower heat, add peppers and simmer till potatoes are tender. Add corn, simmer 10 minutes. Add half & half and heat through. Salt and pepper to taste.
