1 tbsp. Butter
2-3/4 c. Water
3 med. Onions, thinly sliced
1 tsp. finely chopped Fresh Garlic
2 cans (10-1/2 oz. each) Beef Consomme
1/4 tsp. Pepper
1 c. Seasoned Croutons
8 slices Swiss Cheese
1 tbsp. chopped Fresh Parsley

In large saucepan, melt butter until sizzling; add 1/4 c. water, onions and garlic, cook over high heat, stirring occasionally, until onions are softened and lightly browned (6 to 8 minutes). Add remaining water, beef consomme and pepper. Reduce heat to medium and continue cooking 10 minutes. Meanwhile, heat broiler. Ladle soup into 4 ovenproof bowls. Sprinkle each with croutons and top with 2 slices of cheese (place bowls on baking sheet for easier handling). Broil 5 to 6 inches from heat until cheese is melted (2-3 minutes). Sprinkle with Parsley. Serve carefully, bowl will be hot.
