This recipe for Vegetable Chop Suey from Loretta Pratt, by Jean Groberg, is from The John H. Groberg Family Cookbook,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
1 pound lean ground beef 1 cup chopped onion 1 cup chopped green peppers 1 cup chopped celery 2 cups tomato juice 1 cup rice (uncooked) mushrooms (if desired)
Use a large pan with tight fitting lid. (could be done in a Dutch oven) Brown meat, season as desired, leave in bottom of pan. Arrange other ingredients in layers: onions, peppers, celery, mushrooms, with rice as top layer. Pour tomato juice over the layered ingredients. Cover with lid and cook on top of stove over low heat for one hour.
When I was a young girl our family went on camping trips with Jim and Loretta Pratt and family and this was a favorite dinner meal.
