1 pound lean ground beef
1 cup chopped onion
1 cup chopped green peppers
1 cup chopped celery
2 cups tomato juice
1 cup rice (uncooked)
mushrooms (if desired)

Directions:
Directions:
Use a large pan with tight fitting lid. (could be done in a Dutch oven) Brown meat, season as desired, leave in bottom of pan. Arrange other ingredients in layers: onions, peppers, celery, mushrooms, with rice as top layer. Pour tomato juice over the layered ingredients. Cover with lid and cook on top of stove over low heat for one hour.

When I was a young girl our family went on camping trips with Jim and Loretta Pratt and family and this was a favorite dinner meal.
