Cook lb of your favorite pasta (rigatoni or fusili are good)
Some peas
Chopped red pepper and green if you like
Chopped cucumber
Chopped carrots
Chopped tomatoes
Cubed mozzarella or cheddar cheese

--This salad is a goulash of whatever you like. You can add artichoke hearts or omit certain veggies. In my mind, the more color the better.
--For the dressing, I take one of the Good Seasonings Italian dressing packets and add Tbsp salad oil and 2 Tbsp red wine vinegar and the packet mix. It is strong and so if the mixture seems dry after you have tossed it with the dressing you can add little bits of vinegar to it. It will soak up the dressing after it is chilled for a while. It is easy and tasty.
