1 pound lean ground beef
3 medium zucchini, thinly sliced
1/4 c. sliced green onions with tops
2 teaspoons salt [ I use less]
1/4 teaspoon garlic powder
1-7 oz can chopped green chiles
3 cups cooked rice
1 cup sour cream
1 large fresh tomato, sliced
salt and pepper to taste
2 cups grated Monterey Jack cheese

Directions:
Directions:
Saute beef, zucchini, onions and seasonings in a lightly greased skillet until meat is no longer pink and vegetables are tender crisp, stirring frequently. Add green chiles, rice, sour cream and 1 cup cheese. Put into a buttered shallow two-quart casserole dish. Arrange tomato slices on top. Season with salt and pepper, if needed. Top with remaining cheese. Bake at 350 for about 20 to 25 minutes.
