1 9 inch pie shell
1 large onion, diced
1/2 lb. bacon
3 eggs
1 cup whole milk
1/2 cup light cream
1 1/2 cups Swiss cheese
(grated or shredded)
1 tbsp, flour

Directions:
Directions:
Fry bacon and crumble. Pour off fat. Saute onion in a little bacon fat and lightly brown. Bake pie shell for 5-6 minutes in 400 degree oven. Remove. Put cheese in shell and sprinkle bacon and onion over cheese. Whisk together eggs, milk, cream and flour with a dash of pepper and nutmeg. Pour into pie shell and bake about 40-45 minutes in 350 degree oven. Check at 40 min.

Another recipe from my neighbor, Theresa McHugh. I didn't realize how many recipes she had given me! At about age 85 she also gave me her favorite cook book. She died later that year, 1987.
