Graham Cracker Crust:
1 1/2 cups (24 squares) graham crackers, crushed
1/4 cup sugar
1/3 cup butter or margarine, melted

Filling:
1 - 8 oz pkg cream cheese
1/2 cup sugar
1 tbsp lemon juice
1/4 tsp vanilla
2 eggs

Directions:

Crust:
Combine graham cracker crumbs, sugar and melted butter or margarine. Blend well and press onto bottom and up sides of ungreased 9 inch pie plate. Bake at 375 degrees for 8 - 10 minutes (until lightly browned). Cool before filling.

Filling:
Combine cream cheese, sugar, lemon juice, vanilla and eggs and mix well. Pour into cooled crust and bake 25 minutes at 325 degrees. Cool.

Can top with pie filling or fresh fruit - or leave plain.
