Ingredients: 1 lb. ground beef, chuck 1/2 lb. Jimmy Dean's sausage 1 med. onion, chopped 1/2 t. garlic powder 1 - 28 oz. can tomatoes 2 - 6 oz. cans tomato paste 1/2 c. water 1 t. salt 1/2 t. each basil & oregano 1/8 t. crushed red pepper 2 eggs 12 oz. carton cottage cheese Grated Parmesan cheese 1/2 lb. Mozzarello cheese, grated

Directions:Brown ground meat, chopped onion, and garlic. Drain. Add tomatoes, tomato paste, 1/2 c. water, 1/2 t. salt, herbs and red pepper. Simmer, covered, one hour. Beat eggs and add to cottage cheese. Cook lasagna noodles as directed on package. In 13x8x2" baking pan, spread about 1/2 c. sauce. Top with 3 noodles. Spread another layer of sauce over noodles and top with dollops of egg-cottage cheese mixture. Sprinkle with grated Parmesan cheese. Continue layering until pan is filled. Top with sauce and sprinkle with mozzarello cheese. Bake at 375 F. for 25-30 minutes. |
