FOR SAUCE:
* 1 TBSP. butter
* 1/2 cup minced onion
* 1 cup fresh crushed pineapple
* 2 TBSP. flour
* 1 TBSP. curry powder
* 1 tsp. each salt & sugar
* 1 TBSP. lemon juice
* 1/2 tsp.finely minced fresh peeled ginger
* 2 TBSP. flaked coconut
* 1 cup coconut milk
* 1 cup chicken broth
FOR CHICKEN:
* 1 TBSP. butter
* 1 medium sweet onion/quartered
* 1 TBSP. {total} asst. herbs
such as dill/basil/sage/savory
* 1 pound chicken tenders/slightly pounded
* salt & pepper
* 1/4 cup chicken broth

FOR SAUCE:
*Lightly spray a medium saute pan & then melt the butter.*Cook the onion 'til tender,add the pineapple & cook another 2 minutes.*Sprinkle in the flour,curry,salt,sugar,lemon juice,ginger & coconut & stir to combine.*Add the coconut milk,& broth,mix well,& cook over very low heat 'til thickened.*Cool slightly,then transfer to a blender & blend 'til smooth.
FOR CHICKEN:
*Saute the onion in the butter 'til tender,sprinkle in the dried herbs & cook for another minute.*Transfer to a bowl & set aside.*Salt & pepper the chicken & saute in the same pan over medium heat 'til lightly browned on both sides,about 3 to 4 minutes per side.*Transfer the chicken to a plate.*Deglaze the pan with the broth & reduce the liquid to half {about 3 minutes}*Stir in the onions & the curry sauce & mix well,add the chicken & heat completely through.*Serve immediately.
