* 3 ounces softened cream cheese
* 2 TBSP. minced onion
* 1 TBSP. parsley
* 1/2 tsp. dill
* 1 tsp. finely chopped garlic
* 8 ounces crabmeat/shredded
* 4 boneless skinless chicken breasts
* flour
* 2 beaten eggs
* 2 cups seasoned breadcrumbs
* 1/4 stick butter
* 2 TBSP. canola oil

Directions:
Directions:
*Combine the first 5 ingredients in a medium size bowl,then add the crab & mix well.*Season with salt & fresh ground pepper.**This is really good made ahead of time,it gives the flavors a chance to blend**
*Using a small sharp knife,cut horizonally through each chicken breast to create a pocket.*Fill each pocket with 1/4 of the stuffing.*Dip each piece in the flour,then the egg,then the breadcrumbs {be sure to coat completely}
*Melt the butter with the oil in a large heavy skillet over medium heat.Cook the chicken 'til golden brown, about 12 minutes per side.
