2 tsp. butter
1/2 c. chopped onions
2 tsp. flour
1 qt. boiling chicken stock
1/2 c. ground blanched almonds
1/2 c. heavy cream
salt and fresh ground white pepper

Directions:
Directions:
1. Melt butter in a saucepan, add the onions, and cook until soft but not browned. Stir in the flour.
2. When blended add the boiling stock, stirring briskly. Allow to simmer a few minutes. Stir in the ground almonds.
3. Cook at the simmer for 20 minutes. Stir in the cream and allow to heat through. Season with salt and pepper to taste. Serve hot.
