1 pound shrimp, shelled and deveined
2/3 cup coconut milk (or heavy cream)
2 tbsp. flour
1 tsp salt
2/3 cup minced onion
1/4 c. butter
1/2 clove garlic, minced
1-1/2 tsp. curry powder
1 tsp. grated ginger

Directions:
Directions:
Place shrimp in medium bowl with coconut milk or cream and sprinkle with salt. Toss lightly, cover and chill for 2 hours or overnight. Melt butter in large skillet and add onion, garlic and ginger. Cook and stir until onion is softened. Add flour and curry powder and stir. When flour is absorbed add shrimp with liquid and cook until liquid is thickened and shrimp are pink. Serve with rice.
