*1 {8 ounce} package lo mein noodles
* 1/3 cup peanut butter
* 1/4 cup soy sauce
* 1/4 cup orange juice
* 2 cups shredded carrots
{find these already shredded by the other
carrots ~OR~ on the deli salad bar}
* 1 large red pepper/cut into 1/4" strips
* 6 green onions/sliced
* 1/2 cup dry roasted peanuts
* 3/4 cup washed & cleaned snow pea
pods / blanched

*Break the noodles into thirds & cook as directed,rinse with cold water & drain.*Mix peanut butter,soy sauce,o.j. until smooth.*Toss all ingredients together & serve.
