* 1 large red tomato/sliced
* 1 large yellow tomato/sliced
* 1 large cucumber/sliced
* 8 ounces mozzarella/sliced
* 2 TBSP. olive oil
* 1 TBSP. lemon juice
* 1/8 tsp.each salt & fresh ground pepper
* 1/3 cup coursley chopped fresh basil
~OR~ lemon basil

Directions:

*On a large platter arrange the tomatoes,cucumbers & cheese , alternating & overlapping in a singer layer.
*In a small bowl , whisk together the oil,lemon juice,salt & pepper & drizzle over the salad.
*Sprinkle with the basil.
**NOTE: This salad is easy to make ahead of time , just don't dress it 'til it's time to serve it.**
