1 large tomato
1 cucumber
1 avocado, firmly ripe, not soft
1 cob sweet white corn
salt and pepper to taste

Directions:
Directions:
It is best to use garden or Farmer's Market fresh vegies. Parboil the corn--just 1-3 minutes, not too long. Cut the kernels off the cob. Chop the tomato, cucumber and avocado. Gently stir everything together and add salt and pepper to taste. Serve immediatley.

Note: If you want to make a larger serving, just add more of each item, or you can go heavy on whichever vegetable you favor. If you chop the veggies finely this also works wonderfully as a fresh salsa. Serve with corn chips.
