1 1/2 c. flour
1 tsp. baking powder
1 tsp. salt
1 1/2 c. buttermilk
3 eggs, separate yolks and whites
1/3 cube butter, melted
3 T. sugar (optional)

Directions:
Directions:
Mix all ingredients, except egg whites. Whip egg whites until stiff, then fold gently into first mixture. Pour onto hot griddle to cook. Variation: Add 1 mashed banana and 1/2 cup broken pecan pieces. Mix in before the egg whites.
