1/2 cup butter or margarine
1 cup sugar
2 eggs
1 tsp vanilla
2 cups flour
2 tsp baking powder
1/2 tsp salt
3/4 cup milk
1 1/4 cup flaked coconut

Directions:
Directions:
In mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, baking powder and salt. Add to creamed mixture alternating with milk. Stir in coconut. Pour in a greased 9 inch loaf pan. Bake at 350 for one hour or until a toothpick inserted in center comes out clean. Cool for 10 min. before removing from pan. Cool on wire rack completely.
