2 cornish game hens, rinsed and cleaned
4 tbsp. butter
2 tbsp. olive oil
1/2 c. wild rice
4-oz. can sliced button mushrooms with liquid
1-1/2 c. chicken broth
2 tbsp. cognac or brandy

Directions:
Directions:
In large frying pan or dutch oven brown game hens in butter and olive oil over medium heat until golden. Set aside. Mix rice, broth and mushrooms with liquid in dutch oven or covered casserole and place hens on top of rice mixture. Pour pan drippings over hens, cover tightly and bake at 350 degrees for 45 minutes or until rice is cooked, adding more liquid if necessary. Place hens on serving platter, sprinkle with cognac and ignite. When flames die, serve with rice.
