3 to 4 pounds pork ribs, simmered in water for 30 or 40 minutes and drained
1 7-oz. can unpeeled apricots in heavy syrup undrained
3 tbsp. Dijon mustard
1/2 c. honey
1/3 c. white rice vinegar
1/2 c. chopped scallions

Directions:
Directions:
Place apricots with syrup, mustard, honey and vinegar in blender and process until pureed. Score ribs with sharp knife for easy separation and cut into 4 or 5 rib sections. Bake on rack above drip pan at 350 degrees for one hour, basting frequently with apricot sauce. Sprinkle with chopped scallions, garnish with apricot halves and serve.
