1 c. sugar
2 tbsp. butter
4 tbsp. flour
5 tbsp. lemon juice
grated rind of one lemon
3 eggs, separated
1-1/2 c. milk
1/2 tsp. salt

Directions:
Directions:
Cream butter and sugar. Add flour, salt, lemon juice and grated lemon rind. Stir in three egg yolks and add milk. Beat egg whites until stiff and fold into milk mixture. Pour into buttered 8 or 9-inch cake pan and place in larger pan containing 1 inch of warm water. Bake for 45 minutes at 350 degrees. Pudding will begin to pull away from edge of pan when done.
