1 can (16 oz.) red kidney beans
1 medium onion chopped (1/2 cup)
1 medium green bell pepper ( 1 cup), chopped
1 tsp. salt
2 oz salt pork (diced) or 3 slices bacon (cut up)
1 cup regular uncooked rice

Directions:
Directions:
Drain beans and reserve the liquid. Cook pork (or bacon) in 10 inch skillet until crisp. Add onion and bell pepper, cook and stir until onion is softened. Add enough water to bean liquid to measure 2 cups. Combine bean liquid, pork, onion, bell pepper, rice and salt to beans in 3 quart saucepan. Heat to boiling, stirring one or twice; reduce heat. Cover and simmer 14 minutes, then remove from heat. Fluff with fork. Cover and steam 5 to 10 minutes.
