5-6 medium potatoes, with skins
1/2 medium onion, chopped
2 tsp. salt
1/2 cup vinegar
6 slices of bacon (thick sliced)
2 tbsp. flour
1 cup sugar
1 cup water

Directions:
Directions:
Boil potatoes with skins on. Cool, peel and slice potatoes. Dice and fry bacon. Add chopped onion to bacon dripping and saute until golden. Remove bacon and onion to paper towels. Reserve 1/2 cup of bacon dripping and cool slightly, stir in flour, salt and sugar. Gradually add 1 cup water mixed with the 1/2 cup vinegar, stir over low heat until slightly thickened. Add potatoes, bacon and onion.

It is better if kept warm for several hours before serving, making an excellent pot luck dish. If you like onion as much as I do you may want to use the whole onion.
