3/4 c. sugar
1/4 c. soft shortening
1 egg
1/2 c. milk
1 1/2 c. flour
2 tsp. baking powder
1/2 tsp. salt

TOPPING:
3/4 c. sugar
1/2 c. sifted flour
1/2 tsp. cinnamon
6 T. soft butter

Directions:
Directions:
Cream sugar, shortening and egg together. Add milk and mix. Add flour, baking powder and salt. Mix well and spread batter into a 8 or 9 inch square pan. Sprinkle with desired topping. Bake at 375 for 25-35 minutes.

Variations:
For orange breakfast cake: follow recipe except use 1/4 c. milk and 1/4 c. orange juice and add 1 1/2 tsp. gated orange rind. Also add 1 1/2 tsp. grated orange rind into crumb mixture.

Cinnamon topping:
1/2 c. brown sugar and 1 1/2 tsp. cinnamon.

Streusel filled:
1/2 c. brown sugar, 2 T. flour, 2 tsp. cinnamon, 2 T. melted butter, 1/2 c. nuts (optional). Spread 1/2 of batter into pan, then sprinkle with 1/2 streusel filling. Cover with remaining batter and top with remaining streusel filling.
