2 lbs. large sweet potatoes, scrubbed
1 tbs. olive oil
1/2 tsp. salt
1/4 tsp. freshly ground pepper

*preheat oven to 450

Directions:
Directions:
Half the sweet potatoes then cut into 1/2" wedges. Toss with oil, salt and pepper in medium bowl. Arrange the potatoes in a single layer on a nonstick baking sheet. Bake, turning once until browned and crisp, about 3 to 5 minutes.
