4 cups fresh sugar snap peas, trimmed
1 ripe tomato
2 tsp. olive or canola oil
1 tsp. red wine vinegar
1 small garlic clove
1 tbs. chopped fresh dill

Directions:
Directions:
Put the sugar peas in a steamer basket and set in a saucepan over 1 inch of boiling water. Cover lightly and steam the pease just until bright green, about 2 minutes. Rinse under cold running water and drain well. Transfer to a serving bowl. Meanwhile, to make the dressing slice the tomato in half and grate each half over a 1 cup glass measure, using the soorse side of a box grater, ( you'll get about 1/4 cup of thick juice). Whisk in the oil, vinegar and garlic with a fork. Pour the dressing over the cooled peas, sprinkle the dill. Toss well and serve at once.
