1 1/8 cups vegetable oil
3 cups sugar
2 tsp. vanilla
3 eggs
4 1/8 cups flour
1/2 T. salt
2 tsp. baking powder
1 tsp. baking soda
4 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ground cloves
1/2 tsp. allspice
4 2/3 cups zucchini or carrots shredded

Directions:
Directions:
Cream together the oil and the sugar. Slowly beat in vanilla and eggs. Sift dry ingredients, add to the oil and sugar mixture, stirring just to combine. Pour into greased oversize muffin tins. Bake at 350 for 25 to 30 min.
