Ingredients:  
2 tbsp. butter. 1 small minced onion. 2 minced garlic cloves. 1/2 tsp. dried thyme. 1 tsp. salt. 1/4 tsp pepper. 8 large potatoes, peeled and sliced thin. 1 can reduced sodium chicken broth. 1 cup fat free half and half. 2 cups reduced fat shredded cheddar.

Directions:
Brown onion in butter. Add seasonings. Add potatoes, broth and cream and simmer, covered, until potatoes are tender. Transfer to a baking dish, sprinkle with cheese, and bake at 425 degrees for 15 min. Cool 10 min/ before serving.
