2 c. pumpkin (cooked)
2 heaping tbsp. flour
1 c. sugar
1/2 tsp. salt
2 eggs (separated)
2 c. milk
1 c. cream
1 tsp. vanilla
1/2 tsp. lemon flavoring

Directions:
Directions:
Mash pumpkin finely, mix in flour, egg yolks, salt, and sugar, mixing well. Add milk, cream, and flavoring. Beat whites of eggs until stiff and stir into filling, leaving a froth swimming on top of the creamed mixture. Pour into unbaked crust, sprinkle with nutmeg, and bake at 450 for 20 minutes, then reduce heat to 375 and bake 20 minutes longer.
Yields: 2 pies
