1 cup shortening
1 cup brown sugar
1 cup white sugar
1/2 tsp. vanilla
2 eggs
1 1/4 cups flour
1 tsp. baking soda
1/2 tsp. cinnamon
3 cups quick oats
1/2 cup chopped pecans

Directions:
Directions:
Place shortening, sugars, vanilla and eggs in a mixing bowl and beat thoroughly. Mis flour with soda and cinnamon; add to shortening mixture and mix thoroughly. Fold in nuts and oats. Drop by teaspoons onto lightly greased (or nonstick) cookie sheets. Bake at 350 degrees for 10 - 13 minutes. Cool about 2 minutes before removing from cookie sheet.

This recipe was my mother's. It is great with an added 12-oz. bag of butterscotch chips. They are the best oatmeal cookies I have ever eaten!
