2 c. whole wheat flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/2 c. butter
3/4 c. brown sugar
1 egg white
1 1/4 c. mashed bananas (about 3 bananas)
1/4 c. plain low fat yogurt

Directions:
Directions:
Preheat oven to 350 F and grease 3 muffin pans. Into a small bowl sift together flour, baking powder, salt and baking soda. Set aside. In another bowl, add butter and sugar and cream together. Beat in egg white, then add bananas and yogurt and beat. Add dry mixture and mix until well-blended. Transfer batter to the muffin pans and place oven rack below the center of oven, and bake 30 minutes (or until slightly browned). Let stand about 10 minutes before removing muffins.
