2 c. warm milk
1 1/2 pkg. dry yeast
1/2 cup sugar
1 stick butter
2 eggs

1 lb. small curd cottage cheese
1 egg beaten
1/2 c. sugar
1 c. sugar
1 1/2 c. flour
2/3 c. crisco
Pinch of salt
cinnamon and/or nutmeg(optional)

Dough: Mix and add enough flour dough easy to knead. Knead dough and place in a large bowl to rise double in size. Knead again and let rise for 15 minutes. Divide dough into three equal parts. Spread dough into 3 (13x9x2 inch) pans that are well greased.
Filling: Mix cottage cheese filling ingredients well and spread evenly over dough.
Topping: Mix topping ingredients together until crumbly. Sprinkle generously over cottage cheese filling. Bake at 350 until topping is brown or dough is done.

Filling can also be made from a variety of fruit. This coffee cake keeps well in the freezer.
