1/2 c. vegetable oil
1 tsp. salt
1/8 tsp, black pepper
2 eggs
4 c. shredded hash browns
2 green onions, thin sliced

Directions:
Directions:
Preheat the oven to 250, line a cookie sheet with paper towels. Heat the oil in a skillet until very hot. Prepare the pancakes by mixing all of the ingredients together. Drop by the tablespoon into the hot oil - cook for 5 to 7 minutes until brown. Keep them warm in the oven until ready to serve.
