6 med. potatoes, boiled cooled and cubed

1 med. sweet onion, sliced thin
1/2 c. celery and celery leaves, chopped
1/2 c. sweet red pepper, chopped
1 tsp. lemon juice
1/2 c. fresh dill, chopped
1/4 c. fresh parsley, chopped
1/2 c. mayo. or salad dressing*
1/4 tsp. paprika
1/2 c. walnuts, chopped

Directions:
Directions:
Set aside paprika and walnuts. While potatoes are still warm, mix with remaining ingredients in a large bowl. Chill overnight then garnish with paprika and walnuts before serving.

You can use 1 cup of plain yogurt in place of Mayo*. Try fresh tarragon, basil, or other herbs in place of the parsley for more flavor.
