1/2 c crumbled gorgonzola cheese 6 figs - cut in 1/4" slices, discard stem 2 T balsamic vinegar 2 T walnut oil 1/8 t kosher salt and pepper 8 oz. proscuitto thinly sliced - cut into strips.
Place 1/2 t gorgonzola on each fig slice - pressing gently into bottom portion. Place figs on parchment paper. Mix vinegar, oil, and salt & pepper together. Assemble - brush each fig with vinegar mixture and wrap with a strip of prosciutto. DO AHEAD TIP - Figs can be assembled up to 1 hour in advance & cover with plastic. DO NOT REFRIGERATE.
