This recipe for Ice Cream Sandwiches, by Mom Anderson, is from The Anderson Family Cookbook,

1 egg 1/2 cup shortning 1/4 cup butter 1 teaspoon vanilla 1 dark chocolate cake mix 1 quart vanilla ice cream
Beat egg, shortning, butter, vanilla, and half of cake mix(dry) until smooth. Stir in remainder of cake mix. Roll out on floured board. Cut with biscuit cutter (or into squares). Bake at 375 degrees on ungreased cookie sheet for 5-8 minutes. Cool thoroughly. Place a mound of softened ice cream on cookie and top with another cookie. Chill and feeze for several hours before eating.
Mom used to make these. They can also be made with sugar-free ice cream and cake mix.
