"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Pats Apple Butter, by Pat Eiermann, is from Good Food, Family and Friends,

Wash and core apples, do not peel. Cut into pieces small enough to go into blender.
Add ¼ cup apple juice and 1 lb. apples to blender. Blend until smooth. Put into large pan to cook. Repeat with juice and apples, until all used. Add spices and sugar. Bring to a boil and simmer 45 minutes. Put into pint canning jars. Process in boiling water bath for 10 minutes, according to directions for canning.
