1 cup margarine or shortening
3 squares melted chocolate
2 cups sugar
4 eggs
1 teaspoon vanilla
1 cup cold mashed potatoes
2 cups flour, sifted
1 teaspoon baking soda
1 teaspoon salt
3/4 cup buttermilk

1 1/2 cup confection sugar
1/2 cup coca
3 tablesoons soft butter
3 tablespoons milk
2 teaspoons lite Karo syrup
2 teaspoons Vanilla

Heat oven to 375F.
Cream together margarine and sugar. Beat in eggs one at a time. Stir in melted chocolate and vanilla. Add mashed potatoes and mix well. Sift together flour, baking soda and salt. Add dry mix to batter, alternating with buttermilk. Blend well after each addition.
Grease and flour 3 9" pans. Bake 20 minutes. Check center of cake and add 10 - 15 minutes if center is still moist.

I use chocolate frosting on just the top of each layer, but you can make a larger recipe and frost sides as well.
Blend sugar and cocoa. Add butter and milk. Add Karo syrup and vanilla and stir until creamy.
