1/4 pound bacon, cut into 2 inch slices
1 pound fresh spinach, torn
1 unpeeled red apple, coarsely chopped
3 green onions, sliced

Mustard Dressing:
1/4 C. olive oil
3 T. red wine vinegar
1 tsp. sugar
1 T. prepared mustard
Salt
Fresh ground pepper

Directions:
Directions:
To make dressing, combine oil, vinegar, sugar, and mustard in a jar and shake well. Add salt and pepper to taste.

Fry bacon until crisp. Set aside to cool. In a salad bowl, combine spinach, apple, and onions. Crumble bacon over top. Toss with dressing and serve
