1 c. - flour
3 tsp. - baking powder
tsp. - cayenne pepper
c. - corn meal
tsp. - salt
2 & 1/3 c. - cheddar cheese, shredded & divided
8 - bacon strips, cooked & crumbled
1 - egg
1 c. - milk
c. - butter, melted

Directions:
Directions:
Combine flour, cornmeal, baking powder, salt and cayenne. Stir in 2 c. cheese and bacon. In another bowl combine the egg, milk and butter. Stir into the dry ingredients just until combined. Fill greased muffin cups full. Sprinkle with remaining cheese. Bake at 425 for 12 to 15 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Refrigerate leftovers. Makes 1 dozen.
