1 lb. ground beef (browned)
3/4 c. shredded carrots
3/4 c. diced celery
4 c. diced potatoes
3/4 c. chopped onion
3 c. chicken broth
1/4 c. sour cream
1 Tbsp. parsley
1 tsp. basil
3/4 tsp. salt
1/4 tsp. pepper
4 Tbsp. butter
1 1/2 c. milk
8 oz. velveeta cheese

Saute onions, carrots, celery basil, and parsley in 1Tbsp. butter. Add chicken broth, ground beef and potatoes. Bring to a boil. Reduce heat and simmer for 10 to 12 minutes. Melt 3 Tbsp. butter and add 2 to 3 Tbsp. flour, brown a little and add milk then cheese, salt and pepper. Add vegetables then add sour cream last.
