2 eggs, seperated 1 c. milk ¾ c. water 3 tbsp. Saco butter milk powder (worth hunting for) 1 tbsp. baking powder 2 tbsp. sugar 1 tsp. salt 1/3 c. + 1 tbsp. oil 1 tsp. vanilla (good vanilla is the secret to fabulous waffles) 2 c. flour OR 1 ½ c. white and ½ c. whole wheat flour
Preheat waffle iron. In small mixing bowl beat egg whites until firm. In a large mixing bowl combine remaining ingredients. Mix well. Fold in egg whites. Spray waffle iron each time. 1 scant cup makes 4 waffle squares. Top with butter, syrup and fresh fruit. May be frozen & reheated in toaster later.
