1 lb. bacon, cooked and crumbled
2 lbs. diced russet potatoes
1 med. onion, diced
1 tsp. salt, divided
1/2 tsp. pepper, divided
12 eggs
1 1/2 cup (6 oz.) shredded cheddar cheese
Salsa

Directions:
Directions:
Sauté potatoes, onion, 1/2 tsp. salt and 1/2 tsp. pepper in hot bacon drippings, stirring occassionally, for about 20 minutes or until browned.

Whisk together eggs, remaining 1/2 tsp. salt and 1/2 tsp. pepper; pour over potatoes in skillet. Cook over medium-high heat 5 minutes or until eggs are set, stirring if necessary. Sprinkle with bacon and cheese. Serve with salsa
