1 lb. ground beef
1 tsp .dried basil
3/4 c. onion, chopped
1 tsp. dried parsley
3/4 c. carrots, shredded
3 c. chicken broth
3/4 c. celery, diced
4 T. butter, divided
4 c. potatoes, diced-peeled
1/4 c. flour
8 oz. American cheese, cubed
1 1/2 c. milk
3/4 tsp. salt
1/4-1/2 tsp. pepper
1/4 c. sour cream

Directions:
Directions:
In 3 qt. sauce pan, brown beef. Then, drain and set aside. In same saucepan, sauté onion, carrots, celery, basil, parsley in 1 T. butter until tender, about 10 min. Add broth, potatoes and beef. Bring to boil. Reduce heat, cover and simmer 10-12 min. or until potatoes are tender. Meanwhile in small skillet melt remaining butter. Add flour. Cool and stir 3-5 min. or until bubbly. Add to soup. Bring to boil. Cook and stir 2 min. Reduce heat to low. Add cheese, milk, salt and pepper. Cool and stir until cheese melts- remove from heat. Blend in sour cream.
